Chocolate Crinkle Cookies

Happy Holidays! I made a batch of chocolate crinkle cookies a couple weeks ago and froze the dough. Now I’m ready!! When I want to make cookies, I pull out the dough, cut them, roll them in powdered sugar and bake!

I used a traditional chocolate crinkle cookie recipe this year. The recipe comes from Cookies Cookies Cookies by Better Homes and Gardens.

Last year and the year before, I made a gluten and dairy free version with coconut palm sugar. This recipe comes from Kale Junkie and is a fabulous recipe!

Breakfasts, Lunches and Holidays

Asian inspired chicken wings, veggies and rice noodles. I used ginger, garlic, olive oil, peanut oil, apple cider vinegar, lime juice, coconut aminos, fish sauce, soy sauce and chili to flavor this dish. I cooked the rice noodles according to the directions and then rinsed them in cold water to stop the cooking and lightly coated them in olive oil with sea salt before adding them to the veggies.

Latkes made with shredded potatoes and onion, egg, flour, sea salt and pepper. I cooked them in plenty of avocado oil and topped them with flaky sea salt. So delicious!! I was going to serve these with some whipped goat cheese and micro greens , but we had groceries delivered and they brought the wrong kind of cheese and forgot the micro greens. These were still delicious!

Challah!!! I made these for a candied pecan and maple cream cheese French toast- which was fantastic! Except my stand mixer broke while I was making them and I had to knead them by hand! Oh my goodness, I haven’t done that in forever. Thankfully they still turned out yum!

Holiday Break

Here are some of our eats from the holiday break. I definitely did not take a picture of everything and I don’t remember exactly what ingredients I put in each dish. Normally, I take pictures and write down all ingredients as I make various dishes, so it’s ready to post to LooKitchen. But since I was on vacation, I did not!

Sweet potato and apple bake made with an egg and flour dough made from some of the Italian flour I bought.

Things I forgot to take pictures of:

  • Chuck roast bake with the same egg and flour dough and pesto. The braise was made with wine. And I forgot to take a picture of it!
  • Smoothie made with water, banana, frozen berries, spinach, arugula, lemon juice, sea salt, Brazil nuts and collagen peptides.
  • And the most delicious pizzas made with Rose Levy Beranbaum pizza dough recipe from The Bread Bible.
  • Granola butter and chia seed muffins with chocolate!

Chocolate smoothie (banana, spinach, flax seeds, whey protein, water, cacao and vanilla) bowl with granola (Pumpkin spice granola butter granola- recipe coming soon!).

And leftover thanksgiving turkey pot pie (crust made with brown rice flour) that I had in my freezer! So yum!!

Holiday Treats!

I put some treat bags together with Kale Junkie’s Chocolate Crinkle Cookies dusted in powdered sugar, Gingerbread Cookies (from On Baking by Sarah Labensky, Priscilla Martel and Eddy Van Damme) dipped in melted Marshmallows (from The Professional Pastry Chef by Bo Friberg and Amy Kemp Friberg), and Lemon Bars made with Lemon Curd (from Cooking by James Peterson) and my Vanilla Granola Butter Crust!

Small Holiday Treat Platter

Happy Holidays!! The holiday season looks different for us this year, but I still wanted to whip up a small treat platter!!

Maple Gingerbread Cookies with a Maple Buttercream. I am still working on this recipe, but I will make sure it’s available before next years holiday season! Cookies are made with ghee, coconut palm sugar, maple syrup, vanilla, ginger, cinnamon, sea salt, eggs, almond flour, arrowroot powder and baking soda. Frosting is made with maple syrup, ghee, vanilla and sea salt.

My chocolate fudge recipe! I made this batch with ghee and almond butter!

Pro tip: I only baked off a few cookies since it’s just me and my husband this year. I’ve frozen the remaining cookie doughs and can bake them off as wanted for us and to make cookie boxes for my parents and in-laws.
