Green Cubes for Smoothies

This is a great way to use up greens and bananas!

  • 3 cups water
  • 6-9 handfuls greens
  • 3 bananas
  • Juice of 1 lemon
  • Pinch of sea salt

Combine all the ingredients in a blender until smooth. Pour into silicone molds and freeze until hard.

To use: add green smoothie cube(s) and frozen fruit of choice to a blender. Cover with water. Add optional nuts/seeds and protein (I used hemp seeds and collagen for this smoothie) and blend to combine. Enjoy!!

Smoothie made with water, cherries, strawberries and mixed berries, banana, kale and arugula, sea salt, lemon juice and zest, chia seeds, flax seeds and Your Super muscle power! I topped the smoothies with a cacao ball made with almond butter, maple syrup, vanilla, sea salt, flax seeds, pecans, oats and Your Super chocolate lover!

Rice hash made with leftover rice (cooked with onions, garlic, squash, sea salt, smoked chili and beef stock), chicken, a couple chia seed eggs, Primal Kitchen chipotle Mayo and sea salt. Cooked it in avocado oil. Served the hash with some guacamole (avocado, lemon juice and sea salt) and a lettuce and chard salad tossed with lemon juice and Brightland extra virgin olive oil. I should have toasted some pine nuts for the salad but I forgot and then was too hungry. This was delicious!!

A silly and unpretentious charcuterie platter with pork skins (maple, jalapeƱo and bbq), goat cheeses, crackers, chips and freeze dried strawberries, mango and pineapple. Mustard and jam would have been perfect additions to this platter. I served the platter with a mixed green salad dressed with sea salt, lemon juice, extra virgin olive oil and toasted walnuts.

Oats and Smoothies

Smoothie and overnight oats and chia seeds for breakfast. Smoothie is made with water, banana, spinach, berries, lemon, chia seeds, sea salt, walnuts, collagen and Your Super moon balance and forever beautiful! This batch of overnight oats and chia wasn’t as delicious as the last one I made. I think I used less liquid last time, which created a lovely ā€œbread pudding textureā€. This batch was mushier (for lack of a better word). I prepped a big batch for the week, so I’m thinking I may try cooking the remaining servings. I’ll let you know. It’s still pretty tasty, thankfully. Made with oats, chia seeds, hemp milk, water, sea salt, lemon, bananas, cherries, walnuts and a tiny bit of maple syrup.

Oats and chia seeds cooked with Good Mylk almond milk, Maldon sea salt, Northwest Wild Foods frozen black raspberries and dried cherries, vanilla, maple syrup, almond butter and Your Super chocolate lover. I topped the bowls with toasted pecans and more dried cherries!

Coming this summer, I will be adding posts about my self care practices and why they are so important to me. I intend on discussing self-love and many ways to show yourself that love. One way to show myself love is through eating nutrient dense food that is also delicious and brings joy.

Why do I love smoothies as or part of a breakfast?

1. They are delicious! This is number one because in order for a meal to be satisfying to me, it has to be delicious. And while fueling my body with nutrients is so important, giving my body satisfying and yummy food is just as important to me. If you are having problems creating an awesome smoothie, no worries. You may just need to alter the proportions of the ingredients. Adjust the amount of fruits and veggies for your tastes. My main tips are: flavor wise add an acid (lemon, lime, orange juice) and a pinch of sea salt. Banana and avocado are great additions that make a smoothie creamier. Watch how many superfoods and powders you add, as they drastically change the flavor. Lastly, in order to keep you full, make sure a meal smoothie has protein, fat and fiber in it. Check out one of my recipes.

2. They are full of nutrients! They give me energy and keep me full! Hello protein, fiber, fat, veggies and fruit!

3. I get to hide veggies in them (frozen greens, frozen cauliflower or frozen zucchini). I say “hide” because you can’t really taste them (depending on the amounts of the ingredients).

4. They have lots of fiber in them (hello veggies, fruit and chia/flax). And lots of fiber = šŸ’©

Avocado toast (on garlic chili bread) with micro greens and pine nuts!! Sea salt, smoked chili, lemon juice and extra virgin olive oil!

Sandwich!! Sometimes I just want a sandwich. Garlic chili bread (Simple Mills artisan bread mix with garlic, smoked chili and sea salt added), manchego cheese, spinach (seasoned with sea salt and lemon juice) and breaded chicken. I breaded the chicken with my usual arrowroot and coconut flour mixture, except I added crushed One Degree Organics brown rice crisps cereal to the breading. It was so yum!!

First batch developing a new recipe: chocolate and walnut scones! I served a bit of leftover smoothie with the scones. Scones made with ghee, coconut sugar, vanilla, sea salt, almond flour, baking powder, walnuts and Hu Kitchen chocolate. Topping is a Hu Kitchen salty chocolate bar melted with a bit of peanut butter! Smoothie on fire today!! Water, frozen spinach, frozen blueberries, banana, raspberries, sea salt, lemon juice, walnuts, flax seeds and Your Super muscle power, moon balance and forever beautiful!

Breakfast bowl! My chocolate peanut butter granola (recipe coming soon), papaya and The Coconut Cult yogurts (with some chia seeds stirred in). So yum!!

Smoothie made with water, frozen raspberries, spinach, lemon juice and zest, sea salt, flax seeds, pumpkin seeds and Your Super forever beautiful, moon balance and muscle power!

Tempeh cooked in some extra virgin olive oil with salt and pepper. I added bell peppers, tamari, coconut aminos, garlic, ginger, mustard, roasted pepper and smoked paprika! I placed the tempeh mixture on a bed of spinach. I topped the bowls with pumpkin seeds and added a piece of toasted garlic chili bread. 

Nacho salad. Siete Foods sea salt chips baked with beans, tomatoes and bell peppers (cooked in Brightland extra virgin olive oil with sea salt, pepper, smoked chili and smoked paprika). I topped the nacho portion with some vegan cheese, avocado (with sea salt and lemon) and spinach dressed with Brightland extra virgin olive oil, lemon juice and sea salt. This was very yum!

Garlic chili bread topped with an avocado smash (avocado, lemon juice and sea salt) and a spinach and pumpkin seeds salad (dressed in Brightland extra virgin olive oil, sea salt and lemon juice). Quick and yum lunch!!

Cinnamon and coconut sugar bread (made using Simple Mills artisan bread mix. I added vanilla, cinnamon, coconut sugar, sea salt and chia seeds). I topped the bread with chocolate hazelnut spread (Plant Academy) and bananas!

Kale and squash salad recipe from the Plant Academy! So yum!!

I used up my leftovers! Crust is Plant Academy corn pastry, the sauce is a to die for bƩchamel from Plant Academy, sautƩed mushrooms and orange bell peppers (seasoned with sea salt and smoked chili) topped with a chard salad dressed in sea salt, lemon juice and zest, Brightland lemon extra virgin olive oil and black pepper. I added some dehydrated tomatoes (Plant Academy) and toasted pine nuts.

Cranberry Orange Smoothie

Makes 4 servings (you can keep the extra servings in the refrigerator for leftovers!):

3 cups of water

1 cup fresh cranberries

Zest of 1/2 an orange

Juice of an orange

3 bananas

Heaping 1/2 cup ice cubes

Pinch of sea salt

8 scoops collagen peptides

3 TB chia seeds

1/3 cup walnuts

Add all ingredients to a high powered blender and mix until very well combined. Enjoy!

Working on a new granola recipe: pumpkin granola! It needs some work, but the recipe is coming soon. Ingredients: oats, flax seeds, chia seeds, sea salt, vanilla, maple syrup, pumpkin, cinnamon and walnuts.

Massaged kale salad dressed with extra virgin olive oil, red wine vinegar and mustard. I added toasted pecans to the kale. Avocado toast on AWG Bakery bread, crisped up in a bit of avocado oil with sea salt. I seasoned the avocado with lemon juice and sea salt. I topped the avocado with a few tiny red and orange peppers and an egg. Yum!

Greens tossed with sea salt, red wine vinegar and extra virgin olive oil. I added pecans and hemp seeds to the greens and topped the bowl with leftover rice patties (leftover veggie rice, egg and chickpea flour cooked in avocado oil).

Greens dressed in red wine vinegar, extra virgin olive oil and sea salt. I added bell peppers, rice and Tribali Foods beef to this salad.
