A little shepherds pie with the ingredients I had on hand: ground beef, extra virgin olive oil, butter, sea salt, pepper, onions, carrots, bell pepper, eggplant, garlic, sweet potatoes, coconut milk and stock.

Smoothie made with water, greens, apple, frozen peaches, frozen raspberries, flax seeds, lemon, sea salt and collagen!

Made my chocolate (cacao paste, ghee, vanilla, sea salt, maple syrup) and the chocolate chip cookie recipe (from The Silver Palate Cookbook). I didn’t have any chocolate chips and didn’t want to wait for the chocolate I made to harden, so I topped the cookies with melted chocolate.

I ordered from Butcher Box for the first time and I saw they had chicken nuggets. The ingredients are good so I ordered them and they are tasty! I made a dipping sauce from avocado, mayo, lemon juice, siracha and sea salt.

Lentil and rice cakes topped with avocado, lemon, sea salt and bacon! Lentil and rice cakes are made with equal parts red lentils and basmati rice. Recipe coming soon!

What to do when you need to go to the grocery store? Chicken stock, scrambled eggs, noodles and sauerkraut! This was actually pretty yum!

Quick peanut butter brownie (no measurements) made with peanut butter, egg, coconut palm sugar, maple syrup, cocoa powder, baking powder and sea salt.

Pizza that needed a few more minutes in the oven (but we ran out of time 🤷🏻‍♀️). Pizza is made with tomato sauce, ricotta and fontina cheese.

Beef and broccoli with rice. Beef is made with beef, extra virgin olive oil, sesame seeds, soy sauce, coconut palm sugar, ginger, garlic, chili, rice vinegar, miso, coconut aminos and broccoli!

Salad made with chicken sausage, lettuce, apples and pecans and dressed with a bit of orange sauce leftover from orange chicken mixed with mayo.

Hot dogs buns!! These were delicious, but I didn’t have enough time and didn’t proof them long enough so they lost some of their shape and went a little flat 🤷🏻‍♀️ Hubby insisted on peppers, relish, ketchup and mustard as the toppings!

Back from a 2 week trip to Europe with my husband! We walked around, went to museums, restaurants and traveled around a little bit. We ended up buying art we are excited about! Happy to be back home and back into the cooking rhythm…

Still working on my sushi rolling skills… purple rice, jumbo lump crap, bell peppers, avocado, chipotle mayo and seaweed.

Chicken salad made with chicken sausage, bell peppers, cucumber, cabbage, mayo, lemon juice, sea salt, black pepper and mustard. I used the lettuce as boats to house the chicken salad.

Quick lunch made with jumbo lump crab meat, avocado, chipotle mayo, sea salt, lemon juice and sesame seeds. I ended up wrapping this in a hand roll using a piece of seaweed.

Orange chicken for dinner!!!! I’m digging making Asian takeout dishes at home! I battered and seared the chicken, made the orange sauce, blanched the broccoli and cooked white rice. I finished the chicken and broccoli in the oven covered in the orange sauce. This was super tasty!

Lazy night pasta dinner made with green onions, extra virgin olive oil, leftover roux cubes (tons of roasted garlic, butter and flour), pasta, pasta water, Parmesan cheese, lemon juice, lemon zest and egg yolks. I made this pasta a few nights ago and placed the leftovers in a lightly greased dish. Tonight I topped it with too much 😉 taleggio, red pepper Mitica sheep’s milk cheese and aged prosciutto!

Ramen Inspired and Breakfast

I wanted some ramen but we didn’t have all the ingredients. I will definitely be remaking this next week with meat and pickled veggies!

I made a super delicious and quick broth using water, kombu, bonito flakes, soy sauce, coconut aminos, sea salt, rice vinegar, chili paste and fish sauce! It took less than 30 minutes to make and it was so flavorful! I added some millet and brown rice ramen noodles and a couple boiled eggs that I marinated in soy sauce and coconut aminos.

Leftovers for breakfast! We had some leftover pasta (brown rice pasta in a roasted tomato sauce with onions, garlic and jalapeño), so I added eggs, brown rice flour and flax seeds and cooked it in some extra virgin olive oil!

Veg sushi with some leftover chopped bell pepper, rice, avocado with sea salt and lemon and a miso sauce made with soy, fish sauce, coconut aminos, rice vinegar, chili paste, coconut sugar, garlic and chickpea miso! This was pretty yum…

Groceries

Hubby bought some groceries and I prepped them for the next 4-6 days. Below is what he picked up and I’m curious to see how many days this food lasts.

  • 2 bunches parsley for pesto

I made yesterday:

Braised lamb with onions, garlic, stock, apple cider vinegar, sea salt, pepper and extra virgin olive oil. I think I’ll turn this into a soup? Or maybe some meat and sauce for the breakfast tamales?

I’m waiting on a meat and seafood delivery from Greensbury to restock the freezer!
