I made banana bread with flour, baking powder, sea salt, banana, egg, maple syrup, brown sugar, butter, vanilla, lemon juice and zest. I layered and topped the bread with chocolate granola made using oats, flax seeds, butter, maple syrup, cacao powder, sea salt and vanilla.
I topped this with melted chocolate and ice cream for my dad’s birthday!! It was delicious!!!
I switched cane sugar for brown sugar and honey for maple syrup. I quadrupled the amount of chocolate and used a combination of white, milk and dark!!!

Egg and chard salad made with soft boiled eggs, chard, bell peppers, cucumbers, mayo, lemon juice, red pepper flakes, soy sauce, sea salt, extra virgin olive oil and hot honey. I tossed in a bit of leftover salmon and served this with polenta (water, cornmeal, sea salt, coconut milk, butter, extra virgin olive oil and red pepper flakes). Yum!

Shrimp and potatoes with creamy tomato sauce! I coated the shrimp in brown rice flour, cornmeal, sea salt and red pepper flakes and let it sit on a baking sheet in the fridge for a couple hours. I parboiled the potatoes, let them dry and then coated them in extra virgin olive oil with sea salt and baked them until crispy. I roasted tomatoes, onions and lots of garlic in the oven with extra virgin olive oil, sea salt and red pepper flakes. I blended the tomato sauce with a tiny bit of apple cider vinegar and some butter for richness. I cooked the shrimp in butter and served it all with some lemon!
Berries, yogurt and candied peanuts! I froze berries and vanilla yogurt (The Coconut Cult) for about 30 minutes and topped it with the candied peanuts (peanuts, maple syrup and sea salt).

Potatoes roasted in extra virgin olive oil with salt and pepper. I made a veggie sauce in the food processor with famers market veggies (onion, garlic, zucchini, jalapeños, red chiles), lemon juice and zest, sea salt, pepper, nutritional yeast and extra virgin olive oil. I whisked the veggie sauce with some eggs and poured it over the roasted potatoes. I baked until it was set and it was super yum!
Fennel and onion rice dish that I ended up serving with roasted chicken and broccoli. The fennel rice was made with extra virgin olive oil, onions, fennel, sea salt, pepper, white rice, homemade chicken stock (water, chicken, carrots, onions and rosemary) and lemon juice.
Waffles made with almond flour, arrowroot powder, coconut sugar, baking powder, baking soda, sea salt, coconut milk, maple syrup, vanilla, eggs, butter and chocolate chips. I topped the waffles with bananas, maple syrup and chocolate chips.

Chocolate granola bars made with oats, walnuts, flax seeds, peanut butter, maple syrup, vanilla, sea salt, cacao powder, butter and chocolate chips. I topped the bars with some extra melted chocolate chips.
This was my first take on this recipe. I thought making some Chocolate and Peanut Butter Granola Bars would be fun! These were delicious, but I rolled them too thin and they are a bit dry. I will try again and add a touch more butter and some coconut milk. I am also going to add some baking soda next time to try to achieve a better texture.
These cups feature three of my favorite products: The Coconut Cult yogurt (the literal best yogurt ever!), Hu Kitchen chocolate gems and Oat Haus chocolate granola butter!
I melted some chocolate gems with a bit of butter and used the melted chocolate to line my silpat muffin tray. (Pro tip: I froze the silpat for about 30 minutes before adding the chocolate. This ensures you can use the chocolate to cover the bottom AND sides of the muffin molds.) I chilled the chocolate covered muffin mold in the fridge for 10 minutes. Then I added some strawberry yogurt and topped it with some chocolate granola butter. I chilled the muffin molds for 10 more minutes and then added another layer of yogurt and granola butter. I topped them with some of the melted chocolate and chilled them for a few hours. The result: deliciousness!!!

Sandwich!! Sometimes I just want a sandwich. Garlic chili bread (Simple Mills artisan bread mix with garlic, smoked chili and sea salt added), manchego cheese, spinach (seasoned with sea salt and lemon juice) and breaded chicken. I breaded the chicken with my usual arrowroot and coconut flour mixture, except I added crushed One Degree Organics brown rice crisps cereal to the breading. It was so yum!!
