Watermelon and Tequila Popsicles

6 cups watermelon

2 TB honey

2 limes, the juice of both limes and the zest of 1

1/4- 3/4 cup of tequila (depending how strong you want your popsicles)

1/4 tsp sea salt

Blend all ingredients together in a high powered blender.

Pour into popsicle molds and freeze for at least 6 hours.

I had extra watermelon tequila mixture, so I froze it in ice cube molds. I will add the cubes to juice or a cocktail for an adult treat! You can also serve the extra mixture poured over ice.

Coconut and Chocolate Milk Shake

This shake is a fantastic quick dessert!

Makes 4 shakes:

  • 1 1/2 cups water
  • 1 cup ice
  • 2 scoops collagen peptides
  • 1/4 cup coconut manna
  • 5 dates
  • 1/4 cup maple syrup
  • large pinch of salt
  • 1/4 tsp vanilla
  • 3 TB cacao paste, chopped into small pieces
  1. Combine the first 8 ingredients, in the order listed, in your Vitamix (or another high power blender of your choice). Blend on high until completely smooth.
  2. Add the chopped cacao paste to the blender and “cut in” using a low-medium setting until the cacao paste is chopped up into very small pieces.

Coconut Cream and Chocolate Shake

This meal shake is yummy and one of my husbands favorites! It will absolutely keep you full, as it is filled with healthy fats and proteins!

Serves 2:

  • 1 1/2 cups water
  • 1 cup ice cubes
  • 4 scoops collagen peptides
  • 1 TB flax and/or hemp seeds
  • 2 TB coconut manna
  • 2 TB cacao powder or 1 tsp cacao paste, chopped into small pieces
  • 4-5 dates
  • 1 TB manuka honey
  • 1/4 tsp vanilla extract
  • large pinch of sea salt
  1. Add ingredients to your vitamix. Blend on high until combined. Pour into glasses and enjoy!
  2. You may refrigerate for a few days in a jar with a lid. Shake before drinking.

Almond Chocolate Shake

This is one of my favorite quick meal shakes.

Serves 2:

  • 1 1/2 cups of water
  • 1 cup ice cubes
  • 4 scoops of collagen peptides

  • 2 TB cacao powder or 1 tsp cacao paste, chopped into small pieces
  • 4-5 dates
  • 1 TB manuka honey
  • 1/4 tsp vanilla extract
  • 1/8 tsp sea salt
  1. Add ingredients to your Vitamix– or another high power blender. Blend on high until combined. Pour into glasses and enjoy!
  2. You may refrigerate for a few days in a jar with a lid. Shake before drinking.
