Shandy

A shandy is equal parts beer and lemonade. They were yum!

I bought a German wheat beer and made lemonade (lemons, maple syrup, sugar, water and sea salt)!

Lemonade:

  • 2 1/2 cups fresh squeezed lemon juice (I used 14 lemons)
  • 1 cup Water
  • 1/2 cup sugar
  • 1/4 cup maple syrup
  • Large pinch of sea salt

Juice lemons and add to a large jar or pitcher. Heat water, sugar, maple syrup and salt over low heat in a saucepan until all the sugar is melted, turn heat up to medium- low and let simmer for a few minutes. Add the simple syrup to the lemon juice and shake or stir to combine,

Shandy:

  • Lemonade
  • Beer

Add lemonade to your cup and top with beer!

Watermelon and Tequila Popsicles

6 cups watermelon

2 TB honey

2 limes, the juice of both limes and the zest of 1

1/4- 3/4 cup of tequila (depending how strong you want your popsicles)

1/4 tsp sea salt

Blend all ingredients together in a high powered blender.

Pour into popsicle molds and freeze for at least 6 hours.

I had extra watermelon tequila mixture, so I froze it in ice cube molds. I will add the cubes to juice or a cocktail for an adult treat! You can also serve the extra mixture poured over ice.

Frozen Strawberry Daiquiri

These daiquiris are strawberry-licious!!!

Makes 2 cocktails:

  • 1 cup coconut water
  • 1/4 cup rum
  • 1 lemon, juice and zest
  • 1-2 TB manuka honey
  • pinch of sea salt
  • 1 1/2 cups frozen strawberries
  1. Blend all ingredients in Vitamix– or another high power blender. Serve or refrigerate until ready to serve.

*please use organic ingredients, if possible. Be wary of processed honey. Make sure to buy raw honey.
