Eat Plants: Breakfasts and Lunches

Thursday is now plant based inspiration day at LooKitchen! I will be posting pictures and descriptions of 3 breakfasts and 3 lunches every Thursday.

A post coming soon on what plant based eating means to me.

Plant Based Inspiration:

Below pictures 1 and 2: granola and yogurt bowl topped with berries, chlorella, lions mane mushroom and bee pollen! This bowl is made with The Coconut Cult specialty flavored yogurts: cacao and turmeric, respectively.

Below pictures 3-5: avocado and pineapple mousse. 1 avocado, 1 cup pineapple, 1 TB honey, sea salt, the juice of an orange (and a bit of zest), 2/3 cup of pumpkin seeds, a pinch of chlorella and 3/4-1 cup of plant based milk. Topped with cacao nibs and shredded coconut.

Below pictures 1 and 2: quinoa bowl with black beans, sweet potatoes, turmeric, black pepper, sea salt, coconut aminos, extra virgin olive oil, lemon juice and greens. The bowl is topped with avocado, lemon juice, sea salt, pumpkin seeds and hemp seeds!

Below pictures 3-5: avocado Smash is topped with tomatoes, sea salt, balsamic vinegar, mint, pumpkin seeds, hemp seeds and coconut aminos! This smash is made on Nut and Seed Bread (a Sakara recipe).

Below 4 pictures: Carrot Bread with Cinnamon Almond Glaze. My first attempt at a plant based, vegan, dairy and gluten free carrot bread. This bread is made with carrots, flax seeds, almonds, oats, chia seeds, salt, extra virgin olive oil, coconut oil, honey, vanilla, ceylon cinnamon and plant based milk (pumpkin seed)! This was delicious. I have to make a couple tweaks to my recipe, then I will post this as a delicious plant-based breakfast (or dessert) that is sweet and feels indulgent, but is actually very low in sugar and high in protein and fiber. Each piece has 1 tsp of honey in it.

Below 4 pictures: a simple arugula salad dressed with sea salt, balsamic vinegar and extra virgin olive oil. Topped with roasted purple sweet potatoes, micro greens tossed with sea salt and balsamic, goji berries, shredded coconut, pumpkin seeds, avocado with lemon and hemp seeds.
