I made chocolate granola using oats, almonds, butter, cocoa powder, maple syrup, vanilla and sea salt!
My go-to granola method: First I toss the oats and salt together and bake them at 325 for 10 minutes. While the oats are baking, I combine the butter, maple syrup and vanilla in a small saucepan and let it melt over low heat. Once the butter is melted, I turn off the heat and add the cacao powder. I stir to combine and pour this mixture over the oats and salt as soon as they come out of the oven. I add the almonds and stir the granola mixture until everything is well combined and all the oats and almonds are covered in the chocolate butter mixture. I return the granola to the oven for 25 minutes, stirring after 15 minutes. When I remove the granola from the oven, I let it sit until it reaches room temperature. You can make granola on parchment paper or directly on a pan (as pictured below). But if you bake it directly on a pan, you have to stir it every 10 minutes after it comes out of the oven until it cools or it will stick to the pan.
