Vegan Pesto

This is an old recipe, but a favorite around here! And I know my mom loves this recipe too!!

  • 1/2 cup extra virgin olive oil
  • 1 small- medium garlic clove
  • 2 TB nut or seed butter (I used almond butter)
  • A very large pinch of sea salt
  • 2 tsp nutritional yeast
  • 2 tsp lemon juice
  • 1/4 cup nuts or seeds (I used pumpkin seeds)
  • 1 large handful of greens (I used parsley)

Add all ingredients in the order listed to a blender or food processor and combine until smooth or chunky. Season to taste with sea salt and pepper. Enjoy!
