Chickpea Slaw Salad

This is very quick and easy!

  • 2 cups chickpeas, cooked
  • 3 TB extra virgin olive oil
  • 1 bag organic slaw mix
  • 1 Lemon
  • 2 tsp Mustard
  • Salt and pepper

Preheat oven to 400 degrees. Toss chickpeas in olive oil and season with salt and pepper. Roast for 20 minutes.

While the chickpeas are roasting, combine slaw mix, lemon juice and mustard in a bowl. Season with salt and pepper.

When the chickpeas are done, pour them (and scrape off any extra oil with a spatula) into the bowl with the slaw. Toss to combine. Enjoy!
