These are yummy year round, but they are also an excellent Halloween treat!
4 oz Chocolate
1 TB Butter or oil
4 TB Peanut butter, room temperature
1 TB Sugar
1 TB maple syrup
Splash Vanilla
Pinch salt
2-3 TB milk
Prepare the molds for the peanut butter cups. You can use a muffin pan or liner/mold. If you are using a pan, grease it with butter.
Melt the chocolate and butter over a double boiler. Remove from heat. Using only half the chocolate, pour a light layer into the pan/molds. Use a spoon or offset spatula to smooth some of the chocolate on the sides of each mold. Quickly put this into the refrigerator.
Mix together peanut butter, sugar, maple syrup, vanilla, salt, and milk in a bowl. Start with 2 TB of milk and add another TB if it’s too thick. It should be a little looser than room temperature peanut butter.
Remove the chocolate from the fridge and top each cup with a dollop of the peanut butter mixture.
If the remaining chocolate has hardened, place it back on the double boiler quickly to remelt it. Pour the remaining chocolate on top of the peanut butter centers and use a spoon or offset spatula to smooth the chocolate. Place in the refrigerator for a couple hours to harden. Un-mold the peanut butter cups, store in the refrigerator and enjoy!!
