Turn oven to 325 degrees.
2 cups oats
1 cup walnuts
Pinch sea salt
1/2 cup avocado oil
1/2 cup + 1 TB maple syrup
1 TB vanilla
1 TB cocoa powder
1 cup ground flax seeds
8 dates, seeded and chopped
Combine oats, walnuts and salt on a parchment lined baking sheet. Bake for 8 minutes.
While the oats and walnuts are in the oven, combine the avocado oil, maple syrup, vanilla and cocoa in a medium to large bowl.
Remove the oats and nuts from the oven and pour them into the bowl with the maple syrup mixture. Stir to combine. Pour the mixture back onto the parchment lined baking sheet and place in the oven for 15 minutes. Remove from the oven and stir. Place back in the oven for 10 minutes. Remove from the oven and allow to cool. It will get crunchy as it cools.
