I love granola and make it with whatever we have on hand. For me, I need oats, nuts/seeds, something sweet (honey, maple syrup, sugar), something fat (oil, butter, nut butter), salt and optional dried fruit/chocolate!
Preheat oven to 325.
2 1/2 cups oats
Pinch sea salt
1 cup walnuts
3 TB coconut sugar
2 TB avocado oil
4 TB maple syrup
4 TB peanut butter
1 TB vanilla
1/2 cup chocolate chunks
Add oats and salt to a baking sheet covered in parchment paper and bake for 10 minutes.
While the oats and salt are baking, combine sugar, avocado oil and maple syrup in a small saucepan over very low heat until it just begins to bubble at the edges. Turn off the heat and add the peanut butter and vanilla. Stir to combine.
Remove the oats from the oven, add walnuts and the peanut butter mixture. Stir to combine, make sure all the oats and walnuts are well coated. Bake for 15 minutes. Stir. Bake for 10 minutes. Remove from the oven and stir in the chocolate. Enjoy!
