Egg in Toast

This is so easy!!

2 pieces of toast

2 eggs

1 1/2 TB butter

Sea salt

Micro greens

Lemon juice

Lightly toast bread in a 350 degree oven for 5 minutes. Remove from oven and cut a hole in the center of each piece of toast (a circle cookie cutter works perfectly!!).

Heat up a pan over medium heat until hot. Add 1 TB of butter and both pieces of bread to the pan. Crack an egg in each hole (sprinkle with sea salt) and cook about 3-4 minutes per side (until the egg is cooked to your liking)*. Add 1/2 TB of butter after your first flip. *You may need to turn the heat down to medium low.

Remove to a plate and cover with micro greens. I sprinkled a pinch of salt over the greens and squeezed a bit of lemon juice over them.
