Pancakes!

Pancakes made with all purpose flour, coconut palm sugar, baking soda, baking powder, sea salt, egg, milk, maple syrup, vanilla, coconut oil and flax seeds. I topped the pancakes with blueberries, maple syrup and an almond syrup (almond butter, maple syrup, water, vanilla and sea salt).

Muffins are made with oats, flax, cassava, arrowroot, chia seeds, cinnamon, sea salt, baking soda, banana, Activist Manuka honey, vanilla, egg, cashew butter and walnuts!
Topping is made with pears, water, lemon juice and zest, sea salt, dragon fruit powder and Your Superfoods Forever Beautiful!

Cranberry Orange Smoothie

Makes 4 servings (you can keep the extra servings in the refrigerator for leftovers!):

3 cups of water

1 cup fresh cranberries

Zest of 1/2 an orange

Juice of an orange

3 bananas

Heaping 1/2 cup ice cubes

Pinch of sea salt

8 scoops collagen peptides

3 TB chia seeds

1/3 cup walnuts

Add all ingredients to a high powered blender and mix until very well combined. Enjoy!

Working on a new granola recipe: pumpkin granola! It needs some work, but the recipe is coming soon. Ingredients: oats, flax seeds, chia seeds, sea salt, vanilla, maple syrup, pumpkin, cinnamon and walnuts.

Massaged kale salad dressed with extra virgin olive oil, red wine vinegar and mustard. I added toasted pecans to the kale. Avocado toast on AWG Bakery bread, crisped up in a bit of avocado oil with sea salt. I seasoned the avocado with lemon juice and sea salt. I topped the avocado with a few tiny red and orange peppers and an egg. Yum!

Greens tossed with sea salt, red wine vinegar and extra virgin olive oil. I added pecans and hemp seeds to the greens and topped the bowl with leftover rice patties (leftover veggie rice, egg and chickpea flour cooked in avocado oil).

Greens dressed in red wine vinegar, extra virgin olive oil and sea salt. I added bell peppers, rice and Tribali Foods beef to this salad.

Hubby requested chicken noodle soup, so that’s what I made!

I had a super busy day developing some new recipes, so i made a quick and simple lunch. Greens, pumpkin seeds, rice and black beans. All tossed in Primal Kitchen buffalo sauce.

Greens, rice, leftover tuna and pumpkin seeds. All tossed with sea salt, balsamic vinegar and extra virgin olive oil. Yum!

Roasted Pumpkin Puree

This puree is great to use instead of canned pumpkin (in case you can’t find any or want to make your own).

Pumpkin

Avocado oil, coconut oil or ghee

Sea salt

Preheat oven to 375.

Cut the top of the pumpkin off, then cut it in half. Scoop out all the seeds and place on a baking sheet.

For these small pumpkins, I used 1/2 tsp of fat per pumpkin half. If you have larger pumpkins you might need 1-2 tsp per pumpkin half. Rub the pumpkins with the fat and sprinkle the tiniest amount of sea salt over them.

Roast until a fork easily pierces the pumpkins. It took about an hour and 10 minutes for mine.

Let the pumpkins cool to the touch and scoop the pumpkin out. Add the pumpkin to a food processor or high powered blender and combine until you get pumpkin puree. Yum!!

Store the pumpkin puree in the refrigerator for a week or in the freezer for longer. I like to add the puree to silicone molds and freeze them for easy access.

Garlic Aioli (Vegan)

This is so yum and easy to make!

1/4 cup cashew butter

2 tsp nutritional yeast

1/4 cup extra virgin olive oil or avocado oil

2 garlic cloves, chopped

3/4 tsp sea salt

juice and zest of 1/4 lemon

black pepper, to taste

Add all ingredients to a high powered blender and blend until well combined. Store in the refrigerator for a week or in the freezer for longer.

Micro greens tossed with lime juice, extra virgin olive oil and sea salt. I added sweet potatoes, toasted walnuts and Tribali chipotle chicken (my favorite) to this salad. I also drizzled a bit of Primal Kitchen buffalo sauce on top. Yum!!

Gazpacho made with tomatoes, onions, garlic, bell pepper, extra virgin olive oil, walnuts, sea salt, smoked red chili, parsley (cilantro or basil would have been perfect, but I don’t have any) and lime juice.

Mixed greens, parsley and pea shoots seasoned with sea salt, lime juice and extra virgin olive oil. I added pine nuts, roasted sweet potatoes and Tribali chipotle chicken to this salad. I also drizzled a little bit of Primal Kitchen buffalo sauce on top.
