Eats: breakfast, lunch and dessert!

Avocado Toast with Salsa from The Farmer and The Cook. This was so yum!

I’ve made a ton of versions of this over our trip to California because it is so easy and quick and requires very little ingredients and equipment. Greens dressed with sea salt, lemon juice and extra virgin olive oil. Rice and some local chicken sausage. Yum!

Lemon cake! This was so yum and I will be formulating a recipe to post soon! Made with flour, coconut palm sugar, baking soda, baking powder, sea salt, lemon zest, eggs, milk, lemon juice, coconut oil maple syrup and vanilla. The cake is topped with a lemon glaze made from coconut oil, maple syrup, lemon juice and zest, vanilla and sea salt.

Superfood Water

This recipe is so quick and refreshing!

2 cups of water

1-2 tsp Your Super powders. I used 1 tsp moon balance and 1 tsp forever beautiful*.

Juice and optional zest of half a lemon

Add powder(s) and lemon to a jar filled with the water. Shake well and add ice. Enjoy!

*The forever beautiful mixture has chia seeds in it. If you want your superfood water to be smooth, use moon balance and or energy bomb instead of forever beautiful.

Chocolate Pumpkin Cookies

These cookies are so yum! They are quick and easy to make and feature two of my favorite brands: Your Super and Birch Benders.

Makes 7 small cookies:

Have all ingredients at room temperature. Preheat oven to 350.

Cream cashew butter with a large wooden spoon or spatula until smooth. Add maple syrup and cream together. Add egg yolk, vanilla and sea salt and cream until well combined. Stir in pancake mix.

Refrigerate for 20 minutes. Remove from the refrigerator and use a portion scoop or your hands and a spoon to form the cookies. Place the cookies on a parchment or Silpat lined baking sheet and bake for 12 minutes (if you make your cookies larger than mine, they will need more baking time). Remove from the oven and let sit on the baking sheet for 10 minutes. Remove to a plate/serving tray and enjoy!

Chocolate Infused with Four Sigmatic Mushrooms

I have taken my chocolate recipe and infused it with Four Sigmatic mushrooms.

My dark cacao chocolate recipe is a fantastic replacement for all dark chocolate needs. It contains only a few real food ingredients and is refined sugar free.

200 g cacao paste

100 g cacao butter

140 g maple syrup

1/2 tsp sea salt

1/4 tsp vanilla

Mushroom add-in: 1 1/2 tsp Four Sigmatic mushroom powder (I used lions mane and a mushroom mixture)

1. Chop cacao paste and cacao butter into small pieces. Place in a mixing bowl over a double boiler. Melt chocolate while whisking frequently.

2. Once chocolate is melted, remove from the double boiler and whisk in maple syrup, salt, vanilla and mushroom powder. Whisk vigorously until it thickens and becomes shiny.

3. Pour chocolate onto a parchment paper lined baking sheet or into silicone molds and freeze until hard.

4. Store in the refrigerator or freezer. Enjoy!!

    Wheatgrass Shot

Wheat grass shots are super healthy! They are filled with chlorophyll and vitamins. Wheatgrass shots help alkalize the body (all greens do!).

This does not taste good. We take it like a shot and chase it with something tasty (coconut water for me and apple juice for my husband).

    Wheatgrass shot, serves 2:

    • 3/4 cup water
    • 2 scoops wheat grass
    • juice of half a lemon
    • 1-2 tsp manuka honey
    1. Blend all ingredients in your vitamix.
    2. Shoot like a shot and chase with something yummy!
