Pesto= Basic Culinary Skill Level- click to read about how I rate the difficulty of my recipes

  • 1/3 cup greens (mint and/or basil)
  • 1 handful spinach
  • 1/4 cup pumpkin seeds
  • 2 garlic
  • 2/3 cup extra virgin olive oil
  • juice and zest of half 1 lemon
  • 3 oz sheep milk feta cheese
  • 1 oz sheep milk manchego cheese
  • salt and pepper
  1. Place first 8 ingredients in your vitamix. Blend until smooth.
  2. Season to taste with salt and pepper (and possible more lemon).
  3. Store in the refrigerator for use within a week. Otherwise store in the freezer: I like to pour the pesto into silicone molds and freeze them, then I turn them out into a mason jar and store that in the freezer for easy small portion pesto access!

*please use organic ingredients, if possible.
